Weekend cookery course

A weekend of real Italian cuisine in a real Italian family. To give your “Roman Holiday” a spark come and learn how to prepare a traditional Sunday lunch and how to shop for it the day before. Saturday morning is spent shopping in Val Melaina market, the biggest and most famous food market in northern Rome, used by all those who appreciate quality matched with cost.

This farmer’s market provides the opportunity to learn how to choose and buy all necessary ingredients for a traditional weekend meal. Tradition dictates that Romans eat trippa (tripe) on Saturdays, it’s a workman’s dish but very flavoursome.

Therefore we will choose together the right piece of tripe (it isn’t easy to recognise the best!) and buy the most appropriate pecorino cheese and mint. Those who don’t appreciate the “fifth quarter”, can choose saltimbocca alla romana or classical meatballs in tomato sauce.

We will also buy ingredients for Sunday lunch, which inevitably includes baked pasta! Timballo, sformato, or lasagna, depending on the season and the Chef’s wishes. You will be told secret ways to make a real meat sauce that, taking six hours to cook, will be prepared on Saturday and consumed the next day.

On Sunday morning homemade pasta and bechamel sauce will be prepared . The dessert, as tradition dictates, will be tiramisù with fresh mascarpone or goat ricotta whipped to a mousse with chocolate or with mandarin jam made from fruits from the family garden.

This is one of the pleasures that Spaghetti in the Family offers you: you can enjoy Italian cuisine comforted by the spring sunshine in one of the few private gardens in the city, or in the summer eating in the shade of a large walnut tree or a fragrant magnolia tree.

Membership Fee per person from 150€

Costs include:

  • Annual Membership with Spaghetti in the Family;
  • transport in private cars on Saturday morning from the meeting point (B1 subway station Conca d’Oro) to Val Melaina market and to the school;
  • expenses for all of ingredients;
  • tasting sessions (starters and desserts), first courses, a desserts; wines.
